(Stew with Peas and Potato’s in a Tomato Sauce + add any Meat) 

Try to cook this tasty dish in the spring and Summer time, when fresh garden peas are in season, and why not get the kids to help you to shell the peas? If you are using fresh ? We use to help our mum back in Cyprus to shell them,we where 2 girls and 2 boys in our house, so you can imagine not many peas ended in the bowl ! One for the bowl and one for us, he he. I promise you the kids will have lots of fun helping and they will also enjoy this dish.

Ingredients (Serves 4 -6)

  • 1.35kg (3lb) fresh peas in their pods, or 700g (1 ½lb) frozen garden peas
  • 1kg (2lb) boneless meat of your choice 
  • 150ml (¼pint) vegetable oil
  • 3  potatoes or any potatoes i prefer cyprus potatoes, peel and cut into chunks 
  • 1 large onion, finely chopped
  • Salt and freshly ground black pepper
  • 1/ glass red wine(optional) bu nice
  • 1 cinnamon stick
  • 1-2 bay leaves
  • 1x400g, canned tomatoes, blended
  • 1 tbsp. tomato pure
  • 300ml (½ pint) warm water or chicken stock
  • 1 tbsp. sugar
  • Juice of ½ lemon
  • 3 tbsp. finely chopped dill or parsley or both

Method

Shell and rinse the peas.

Heat the oil in a wide large pan and brown the meat in two to three stages. Place meat in a bowl and fry the potatoes to brown, remove from the frying pan. Fry the chopped onions gently until soft and brown.
Return meat to the pan, add cinnamon stick ,bay leaves and season with salt and pepper. Pour the red wine, allow to come to the boil then Mix the tomatoes and tomato puree, cook for 5 minutes then add the sugar and stock, the stock should cover the meat. Bring to the boil, turn the heat down, cover with a lid and simmer for 1 hour or until meat is started to soften.

Add the fresh peas and potatoes continue cooking for another 30 minutes or until meat is tender. Add the lemon juice and just before serving, sprinkle with dill or parsley. Serve with lots of crusty bread to mob the juices.

exactly what is says in english under,,, the above is what its called...
