id say roulette over plinko if you want something where you can actually see what’s happening and follow along without zoning out. plinko feels random in a way that’s kinda hypnotic but also dead boring after ten minutes.

my cousin started with baccarat thinking it was fancy and simple but he kept yelling "monkey" at the screen like that would help, so maybe avoid that one at frist

I always tell newbies to start with something like Keno where you just pick a few numbers and chill, no pressure to learn any rules. My personal take is that the games with zero decision making are best at first because you can just soak in the casino vibes without stressing over optimal plays.
