Here is the recipe for my Greek  orange and vanilla cake,  ! A very light and fluffy cake , if you allergic to nuts don’t use them.

Ingredients:

50g, I block butter softened
250g caster sugar
5 eggs, separately
Juice 1 large orange and zest
150ml milk
Few drops vanilla extract
450g self-raising flour
Flake almonds(optional)
For topping
Icing sugar
1.2 litre kugel optround cake tin with a hole, greased and floured

Method:

Preheat the oven to 180c gas 4.
Separate the eggs.
Whisk the egg whites in a glass bowl with a pinch of salt until stiff.
In a large bowl whisk butter and sugar for 5 minutes until smooth and fluffy, then add the egg yolks, one at a time, milk, orange zest and vanilla.
Incorporate flour with the orange juice until all the flour and orange juice have been used and the mixture is smooth.
Fold in the egg whites, a bit at the time and gently pour into your prepared cake tin. Smooth the top and sprinkled the almond flakes if you are using them.
Bake for approx. 50 minutes or until is golden and cooked, test with a fine skewer.
Cool in the tin for 10 minutes, then turn out, into a serving plate, dust with icing sugar.
