Unless you change the client seed yourself, the client/server seed don't change between bets - only the nonce does.

Nonce is just a number they add to the end of the string before hashing, it gets incremented by one each bet. So after you set your seed, the first bet would be the hmac hash of "clientseed" + "serverseed" + "1". Next one would be "clientseed" + "serverseed" + "2", and it just keeps going until you decide to change the client seed.
